Easy Halloween Mini Pumpkin Pies

Autumn is here; cue the imminent arrival of Halloween. With a five year old and a two year old in our house, we try to have a Sunday lunch (dinner) as a family on the weekends. That's often a roast of some kind and whilst there's not usually enough leftover to have it twice we normally have a little of everything leftover. Perfect for the kids to have a second time, you'd think. Except, - if like mine - yours will turn their nose up at having the same meal more than once in a week, ("we ALWAYS have this") then this recipe is for you. Also, who doesn't love an easy Halloween themed meal, which doesn't require you to buy anything new!?

Ingredients (Serves 2 kids)

• Handful of leftover meat/nutloaf from your roast
• Handful of leftover veg - I used roasted carrots, green beans and asparagus
• 4 tbsp leftover gravy (2 for inside and 2 to drizzle on top)
• 2 leftover Yorkshire puddings
• 1/3 sheet of puff pastry
• 1 tbsp milk or egg to brush the pastry 

Method

1. Pre-heat oven to 180c. Find something circular that's about the same size as your Yorkshire pudding circumference. Cut round it and make a little stalk at the top. Use a knife to lightly score your pumpkin pattern. Pinch in a fold along the bottom to create a flat bottom. Cook for 10 mins.
2. Brush with milk or egg and cook for 15 mins.
3. Add your Yorkshire pudding to the oven 2 mins before the end of the cooking time. 
4. Meanwhile, finely chop your leftover meat/veg, and heat in the microwave. 
5. Heat the gravy. 
6. Assemble your pie and serve with any leftover roasties, extra green veg and gravy.

My five year old picked the whole thing up and ate it like a sandwich, obviously the toddler followed suit! Hope yours enjoy it as much!
